Meal Planning Monday: BBQ Chicken Pizza

Since I am outta town this week I thought I would just share with you one of our favorite go to recipes because this week our menu plan says MOMMY GONE DADDY AND KENDALL PICK!

BBQ Chicken Pizza

This is a staple in our house.  I'll be honest and say that I am not a pizza person so I don't crave this recipe, but my husband would eat it once a week if I would make it!  He loves it and I don't mind because it is super easy to make!

You Need:
1 Pizza Crust
Pizza Cheese (as much or as little as you like)
Onion (optional)
Green Pepper (optional)
Diced Chicken (I prefer to use the frozen Tyson's Diced Chicken)
Spices of your choice (I just use a kick N Chicken and a chicken spice)

To Make:

Cook your chicken like normal using the spices.  Once chicken is cooked through add BBQ and let it heat up the BBQ.

Lay your crust on your Pizza pan and spread BBQ sauce on it.

Add onions and green peppers if desired (I am the only one that likes the green peppers!)

Spread out chicken on pizza

Add cheese and bake for about 20 minutes or until cheese is melted!

Tomorrow morning I get on a plane at 9:30 to head to Denver, Colorado for 4 days.  I am extremely excited and nervous about all I will learn this week that will help me grow as a teacher, HERE is more about the conference I will be attending it's a pretty big deal!

But, I am also....

sad...scared....afraid....nervous....and hate leaving my sweet little family behind.

I know they will be fine and I am sure they will have quite a blast without me, but I just hate the thought of not seeing them for 4 days.  I haven't been away from Kendall longer than a day!

I have been super busy around here just getting things done and well doing some of nothing. I missed PL Tuesday this week and I have gotten a little behind and I have to play catchup in May and that's OK with me because that is the great thing about this project! It's so easy to catch up.....

May is a busy month...Chris' birthday...Derby....Last day of school....summer vacation starts....and possibly some other changes that I have been QUITE nervous about! I am excited for May and ready for it to get here...This school year has gone fast, but I am ready to enjoy 10 weeks of freedom with my sweet girl....I need to start working on our Bucket List and I have a few other house projects that I would like to work on....for now

My house is a totally disaster full of toys EVERYWHERE!  This girl has way too many toys..but it's alright I can handle it:)

But, I am sure this sweet girl will take care of supper for her and daddy this week...what a little multitasking!

Instagram Overload

Happy Monday everyone!  Today was a long one for me I had a two hour meeting after school so I didn't get home until after 6:30...makes for a long day and for all those that think teachers work 8-3 come on over and we can have a chat:)

Chris and I have been on an instagram kick here lately so I thought I would share with you some of my favorites from this past week...I might or might not have PL Tuesday up on time tomorrow.  I have been pretty busy preparing for next week so it might be a little late!

So, here goes some of my favorites from this past week!
 We went to the zoo last week and Kendall was scared too death of the metal gorilla...she is so her mother's child scared of her own shadow!
 Kendall and Chris had a daddy/daughter day at the UL Spring football game:)
 I just love how much Kendall loves going to the sitters.  Her family has become part of our family.  These are two of her five grandkids and Kendall just adores them.  Especially her Drake!
 I totally feel this way in the morning lately.  I am long overdue for a nice LONG vacation..luckily for me in 17 days I will be on a 10 week LONG break!!  It better last long.
 Kendall thought she was too cute putting her headband on our big overly due for a grooming dog Charlie!
And sweet girl on Saturday before we went out to lunch. I hated breaking out the warm clothes again, but she sure looked extra cute in her peacoat and ballerina slippers!

Hope everyone has a great week!  I have a meeting tomorrow after work, Wednesday before school and after school and hopefully Thursday and Friday will be calm because I leave early Sunday morning!

Work: Thinking Strategies

First, I am not quite sure I really enjoy this new blogger look...I hate when they fix things when it's not broken, but that seems to happen quite a often in my life. 

Well, I have known about this for months, but have just decided to share on my blog.  I am going a work related trip...something I thought I would NEVER do...something I thought I would have the opportunity to do...something I never really wanted to do haha...but it is an experience I will probably never get again and an amazing opportunity and will look quite nice on my resume;)

I am leaving next Sunday to go to Denver, Colorado for four days.  I am sooooo sad to leave Kendall and Chris like brings me to tears sad, but I am sure they will manage.  I have never ever been away from Kendall longer than a night so this will be different for sure.  I am so lucky to be going with some of my best friends though.

I also wish it wasn't the week of Derby.  There are so many fun things in our city that week and I hate that I have to miss them!

Last spring I was given the opportunity to go to another county in our state for a Thinking Strategies Institute.  We implemented it hardcore in our school this year (like way too hardcore IMO, but that is another post in itself!)  When I say hardcore I mean I had teachers and coaches from other schools in my classroom observing what was so "great" about thinking strategies.  It is's changed my thought process on teaching especially reading...I even had a University person that is considered an "expert" come to my room and watch and she had great things to say!

So, my reason for writing this post is:

1.  Does anyone read my blog from Colorado or ever been to Colorado this time of year and know what the weather is like now? I know that I can look it up, but 60 degrees in Louisville can be quite different than 60 degrees in another state. 

I know I don't share much on here about my teaching profession or what I do with my students often, but maybe when I come back I will share some of my inspiration with you!

And of course I can't leave this post without a sweet picture of my sweet girl that I will miss so much while I am gone:)
 She looks thrilled to have her picture taken haha!

Last Saturday night my Best Friend and I went to see Sugarland!!  We had a lot fun!  There were two other people with I didn't know and the other was Lauren Alaina and she is so stinkin cute!  I love her new haircut and if I was brave I would totally cute my hair like that:)  Maybe one day!

Anyways here is one of the only pictures I took from the concert!

We had a lot of fun.  The concert was so good that I really didn't take any pictures...Sugarland is just a fun duet to see in concert!  My second time seeing them thanks to my sweet husband that bought us the tickets!

Jess teaches first grade with me this year and we have become very, very close.  We taught together last year (she was my intern!) and I am so sad to think that we might not get to teach together next year.  We work so well together, but I fear that is coming to an end.  It has happened once before with my BF Rhonda and I know I will make it, but it's so sad when you work well with someone and then you get split up:(

Anyways Jess and I will always be best of friends.  She says we are grown up BFFS!  I think she is right.

She is getting married in July and I can't wait to spend her special day with her:)  She will be one beautiful bride!

Project Life Tuesday Week ???

I am a week behind and keeping up with what week it is I can't!

I love linking up every Tuesday, because even though I am a week behind, I still feel like I am accountable in some way for my PL and I am keeping up with it!  I don't mind being a week behind, especially since I have my pictures for this week just need to do it!  Hopefully I will have an extra PL post this week!!

Remember I am using the Amber edition and I have also taken the weekly approach rather than the monthly approach.  It was much easier and stress free to not have to worry about a picture every single day!!

This week I have no extra pages.  I love that some weeks I have 2 or 3 inserts and some weeks I have none.  This album is already so much fun to look at and I will definitely keep my album approach the same for the next few years!!

Meal Planning Monday!

I am linking up today with Finding Hope for:

We were on Spring Break last week and we did an absolute horrible job on the eating right part!  Spring break is like a vacation so who wants to cook on their vacation haha!!?

Well, this week we are back to our norm (for about 5 weeks and then we have 10 weeks off!! Can you tell I am excited!!), so I thought I better plan our meals because we both really want to be eating a lot better.  I would really like to lose 5ish more pounds and I HAVE to get back to my work out routine blah!  So, anyways here is our menu for this week!
Sunday: Grilled Chicken, Baked Potatoes, grilled cabbage and onions, and fruit!

Monday: Grilled Pork Chops, Mac and Cheese, Green Beans, Corn, and maybe Mashed Potatoes for Kendall!

Tuesday: Smoked Sausage, red potatoes, onions, cabbage!

Wednesday:  Lasagna Roll ups

Thursday:  Swim Lessons:  We usually just pick something quick like Mcalisters:)

Friday/Saturday:  Not gonna lie by the time Friday gets here I am usually done cooking...I know that's horrible, but my job wears me out...I never plan anything those nights, but sometimes we just eat whats around:)

Swim Lessons

Thursday's we now have swim lessons and it is so much fun!  Kendall LOVES it:)  She listens to most everything the instructor asks her to do and I just crack up at how excited she is about swimming!  It is a mommy and me class and we have so much fun during this 30 minutes every week!  Here are the things that we focus on!

We have so much fun and look forward to it every week...Kendall has already gone all the way under water...she loves the water and I have a feeling I have a fish on my hands for this summer and that is certainly fine by me!

Of course we have major meltdowns each week as we leave swim lessons....we are getting better each week and I am so ready for summer days at the pool with my sweet little fishy!

Spring Break fun

 We have really enjoyed our Spring Break at home doing not a whole lot.  We made a trip to the outlet malls which was a complete disappointment, but that's alright it was something to do:)

I also got a few things done this week including making this Macbook Cover as well as making these bows for Kendall.  I have started putting her hair in pig tails quite a bit, so I needed some double bows to put in her hair.  We went to hobby lobby this week as well and I bought a few more colors to make some more bows this week!
 I also cleaned out Kendall's cabinet in the kitchen.  It was getting a little out of hand...
 So, I pulled everything out of the cabinets....
 And then put it all back in neatly.  I threw a few things out as well that we no longer needed and would replace for baby number 2 (such as medicine dispensers!) 
And this little girl...well she has enjoyed her week at home playing with her toys, most importantly her play doh and having her mommy wait on her hand and foot:)

Well, the bad news is that today is the last day of Spring Break...but the good news is.....we only have 23 school days left til a 10 week summer vacation!  Let the count down begin!!!!

Macbook Cover: Make it Yourself!

I have been drooling over some super cute Macbook covers for quite a while.  I got this book, One Yard Wonders at school the other day from the book lady and when I saw that it had a laptop cover tutorial I was all over it!

I went to Hobby Lobby picked out these super cute fabrics and was on my way...

So, the first night I spent two hours working hard on this cover only to discover that I had made it a tad too short...

So, night two I decided to do a few things a little differently, like make it a little longer, add some pockets to the front, and a flap at the top.....AND


I love it.

It's not perfect....But, I made it all by myself and it didn't cost me a whole lot:)

So proud of myself:)

I am going to Colorado in a few weeks for work and really wanted something to protect my Macbook on this trip so I was thrilled to complete this.

Now I wish I could share the tutorial with you, but this is about as  good as I can do!

1.Measure the laptop length and width.  I then added 2 1/4 inches to both sides.  (The first time I didn't do this, because the pattern I was following said otherwise, but then mine was too short!)

2.Cut four pieces of fabric at that length and two pieces of batting at that length.

3.Sew the batting to two pieces of fabric with right sides together (so you have fabric, fabric, and then batting)  Do this with both sets of batting and fabric

4.Then sew all this together!  With right sides together so that you can flip it through and have pretty edges!

5.I added the flap....I also added a pocket which was just added to a piece of the fabric before I sewed it together with the batting.

6. To add the flap I just cut out a piece of fabric sewed the ends together and then sewed this to the inside of the back of my cover!

Oh the measurements of my pocket you ask?  Oh well see I didn't measure that at all!  Just made sure it was the same width as the other four pieces of fabric....Like I was saying I am not big on patterns or measurements.  I just sorta wing it, which is probably why I had to complete this project TWICE:)

The Dreaded mommies I NEED your help!!

We are enjoying our spring break!  But, we are so dreading night time EVERY night.  My daughter use to be an incredible sleeper....

The Monday after Kendal's birthday we went to her 2 year check up.  When we were almost done I brought up the dreaded paci and the doctor looked at me and said she still has that oh no it needs to be gone and I thought Oh no YOU wanna come live at our house for the next few weeks?

So, we came home I gathered all the pacis, which was about 20 and cut the tips off.  As soon as I cut the tip off she refused it.  She said it's broke and I said yes the doctor broke it (ha got YOU doctor!)  and she threw ALL of them in the garbage and walked away and my mouth fell to the floor. And once I picked it up I got the pacis out of the garbage.

Well, she reminds us often that doctor broke pacis and they had to go in the garbage.

So, my daughter who use to go to bed at 8:00 by simply laying down and going on her own is now staying up til 10:30-11:00 EVERY night and not laying down, but screaming crying til she finally falls asleep.  And it kills this mommy way more than letting her cry it out as a baby ever did.

Yes, I let her cry it out as a baby, but that was easy...she couldn't yell mommy......mommy, my nose is runny (well yeah girlfriend it's runny your screaming and crying at the top of your lungs.) and she couldn't stand in her crib...and I am at loss for what to's a process to get her to sleep each night...Chris and I go in there at least 3-4 times before she goes to bed...

Last night she woke up at 4 because it was getting a little chilly in our daughter that use to take her paci, lay back down, and go to sleep wasn't having guess who held her til she fell asleep???

I honestly think it's because she wants that paci and she doesn't know how to comfort her self at night and it just hurts my feelings for her:(

So, it's been two weeks and I don't put her in bed anymore Chris does, but she is STILL crying and still staying up way past her bedtime.

Has anyone else taken the paci away and had these same issues?  How long did it take to get back to normal or did you?  Please tell me they learn to comfort themselves?

My new worst enemy=the paci and I hope that my next children don't love the thing like Kendall did.

I am so sad too because it's one more reminder that my baby really isn't a baby anymore:(

Project Life week 13 (on week 14)

I am still one week behind on PL Tuesday, but I am sure to catch up this week with Spring Break!  I am so proud of myself.  I have worked really hard to keep up with this project each week and it is sure paying off.  I already love looking at this year's album:)

I am doing a weekly approach rather than a daily approach. I found it took the pressure off of myself and I was more into getting each layout done! I also print my pictures every Thursday night and pick them up to work on over the weekend.  I got behind because my family got a stomach bug a few weeks ago, but I am almost back to date!  And one week behind is better than missing several pictures in my album to date!

Anyways moving on to share with you this week's pictures.  I have 2 extra inserts because of someone specials birthday!  Enjoy:)

Easter 2012!

I am so behind on blogging about important things that have happened in our life the past few weeks and so now is the time to catch up since we are officially off for an entire week!!

Woot Woot!  I am soo excited if you didn't know:)

So, we started our spring break off Friday night by taking Kendall to visit the little ol' Easter Bunny.  And she loved him.NOT

So, I know lots and lots of people think this is horrible, but one day, one day Kendall will look back at these pictures and be mad that we did this to her and then she will laugh a little at them:)

Today we were busy, busy.  We woke up bright and early (not really more like 9:30 which is another post in itself and we headed out to see what the Easter Bunny brought to our house!

Note the bed head and the bangs that are almost long enough to tuck behind our ears. Almost.

We got all kinds of goodies from the bunny, but our favorites?  Oh you know it they were booboos which we are calling bandaids today:)

We had Easter at our house for Chris' family so we had to get our house in some sort of shape to have people here.  Then we also had to find the time in between all of that to see my family for Easter.

Before heading to my Grandma's Chris and Kendall dyed Easter eggs.  I am not sure who loved it more Kendall or daddy.  But, I do know one thing and that is this little girl adores her daddy!

A family picture.  One day we will get a happy smiling family picture and then we will have a new baby that will do exactly what this little girl is doing so maybe in 10 years we will get a good picture haha!

We went to my mom's because the Easter bunny made a stop over there as well..then we headed to my grandma's for lunch. 

We came back home and ate dinner at our house and had an Easter egg hunt.  Kendall and Dillon LOVED Easter Egg hunting. It was so cute!

We are all overloaded on sugar and ready for bed at the same time!
